Direct Grilling
When grilling direct, food is placed over the fire and cooked by direct exposure to the flame and heat. Ideal for steaks, chops, burgers, boneless chicken breasts, kabobs, fish fillets, vegetables, and quick-cooking foods.
With a Stir-Fry & Paella Pan over the hot fire, make a tasty stir-fry in minutes! Tender, boneless foods under 2 inches thick work best.
Direct grilling sears the exterior to form a delicious crust while locking in juices. The EGG's design and closed-lid grilling eliminate flare-ups and hot spots.
For some foods, sear at high temps then reduce heat via dampers to finish cooking.
Indirect Grilling, Roasting & Rotisserie
With indirect methods, use a convEGGtor or Drip Pan to deflect direct heat. Food cooks via convection — heat radiates from coals, walls, and dome. Meats stay naturally juicier when slow-roasted; no separate rotisserie needed.
Vertical roasters let fat/drippings collect below for crisp, delicious results without constant turning.
Smoking
Cooking low and slow with wood smoke is what real barbecue is all about. It breaks down connective tissue for tender, succulent results on brisket, pork shoulder, butts, and ribs.
Times are measured in hours — worth it for fall-off-the-bone tenderness with complex smoke and spice flavors. Smoke fish, turkey, nuts, veggies, cheeses too!
Suggested temps: 225°F–275°F (107°C–135°C). The EGG holds precise low temps for hours with minimal attention. convEGGtor adds a barrier while allowing smoke circulation; convection means no constant turning.
